Muffins are my nemesis. I can bake a cupcake like nobody’s business, but muffins are a different story. Don’t get me wrong, I can make a pretty good muffin, but I’m a perfectionist and “pretty good” isn’t good enough. I want muffins that are moist and fluffy, I want them to rise above the muffin liner, I want them to look like I purchased them at the store. Well…..I think I have found my go-to muffin recipe!! The clouds parted, and the angels started singing when I took these bad boys out of the oven this morning. They turned out exactly how I wanted them to, and they taste good to boot! Oh, and I use  Chinese Five Spice from RawSpiceBar……what!!

The Recipe: Spiced Apple Muffins

Ingredients:

  • Topping:
    • 1/3 cup brown sugar
    • 1 tbs sugar
    • 1 tsp cinnamon
    • 1/4 cup melted butter
    • 1/2 cup flour
    • 1/4 coconut flakes
  • Muffins:
    • 1 3/4 cup flour
    • 1 tsp baking soda
    • 1 tsp baking powder
    • 1 tsp Chinese Five Spice from RawSpiceBar
    • 1/2 tsp salt
    • 1/2 cup butter
    • 1/2 cup brown sugar
    • 1/4 cup sugar
    • 2 large eggs
    • 1/2 cup sour cream
    • 2 tsp vanilla
    • 1/4 cup coconut milk
    • 1 1/2 cups apples, peeled and chopped
  • Glaze
    • 1/2 cup icing sugar
    • 2 tbs coconut milk
    • 1/4 tsp vanilla

Directions:

  • Topping
    • combine all ingredients in small bowl, stir until crumbly, set aside
  • Muffins
    • preheat oven to 425, line muffin tin with liners
    • in medium bowl combine flour, baking soda, baking powder, five spice, salt and set aside
    • in another medium bowl add butter and sugar, cream until light and smooth, add eggs, sour cream and vanilla and mix until combined
    • stir in flour mixture, just until combined, do not over mix, then add coconut milk and mix but make sure to leave little lumps in batter, add apples and mix again
    • use an ice cream scoop to spoon batter into pan, sprinkle with crumb topping
    • bake at 425 for 5 minutes, leave oven closed, turn heat down to 350 and continue to bake for 15 minutes
  • Glaze
    • mix glaze ingredients until smooth, add more icing sugar until desired consistency
    • spoon glaze over muffins and enjoy

Notes:

  • I was a little sceptical about the five spice, but it adds the right amount of spice to the muffins
  • really be careful not to over-mix, make sure you leave some lumps in the batter
  • add lots of crumb mixture, it’s really good
  • you could probably add walnuts or pecans to the mixture
  • this is a new favourite
