Chef’s Plate Review – Spicy Black Bean Burrito Bowls

I’m kind of embarrassed to admit this, but……I get so darn excited when I login to my Chef’s Plate account and see that new recipes have been released. I usually check my account Sunday afternoon and pick out my recipes for the following weeks. It’s something I look forward to each week. I also get REALLY excited to test out the new recipes, like we are talking E.X.C.I.T.E.D! My kitchen game is on point thanks to Chef’s Plate. I honestly couldn’t be happier with a subscription box than I am with this one.

I went over all the subscription details in my last post so today we are going to get straight into the fun part……this week’s recipe:

Recipe: Spicy Black Bean Burrito Bowls

Ingredients:

  • 1 can black beans
  • 5 oz brown rice
  • 1 avocado
  • 1 red bell pepper
  • 2 roma tomatoes
  • 1 lime
  • 2 sprig fresh cilantro
  • 2 oz chipotle peppers in adobo
  • 3 cloves garlic
  • 1 oz tomato paste
  • 1 tsp brown sugar
  • 2 grams smoked paprika
  • 1 gram ground cumin

Directions:

  • in medium pot cook rice – add to 1 3/4 cup water, season with salt, bring to boil, cover with lid, reduce heat, cook for 28-30 minutes
  • drain black beans and reserve 1/4 cup liquid, mince garlic, slice pepper, slice avocado, chop cilantro, dice tomato, roughly chop chipotle peppers
  • in large pan add 1 tbs oil, cook peppers for 6 minutes until softened, add tomato paste, spices, sugar, chipotle peppers, 2/3 garlic, cook 3-4 minutes, then add beans, liquid, season with salt and cook for another 4-5 minutes, remove from heat
  • in small bowl add tomatoes, juice from half lime, half cilantro, remaining garlic, season with salt and mix
  • to the rice add remaining cilantro, remaining lime and mix
  • plate the cilantro lime rice with chipotle black beans, pico de gallo, and avocado
  • enjoy
