Here’s a closer look at our October spices…….

Moroccan Mkaouara
Mkaouara is a popular Moroccan Kefta Tagine with cherry-sized meatballs and eggs. Tomatoes are not supposed to be added to this sauce. It’s just pure gravy from the juicy meatballs. Comfort food at its best. For a faster version, you can form the meatballs a bit larger.

Variations

  • Substitute broccoli with zucchini, pumpkin, green beans, turnips, or a fresh salad.
  • Substitute cilantro with parsley.
  • Substitute beef with veal or pork.

The Mkaouara Culinary Spice Kit includes the following spices:

  1. Paprika, cumin, cinnamon, mint, black pepper
  2. Cayenne
Greek Avgolemono

The basic recipe for Avgolemono is a healthy chicken soup thickened with eggs and seasoned with lemon juice to taste. Perfect for the cold season. We added a modern twist with our pink pepperberry-lemon thyme blend.

Soup, Pasta, or Else?

Optionally, make a delicious Avgolemono pasta sauce. You can add your favorite vegetables either in the soup or pasta sauce. Or pour the sauce over cooked or fried vegetables. A good fit is green asparagus, turnip, rutabaga, pumpkin, zucchini, and/or carrot.

Variations

  • Skip the chicken soup step and buy cooked shredded 
  • chicken and chicken broth instead.
  • Substitute orzo with small noodles or cooked rice.
  • Add your favorite vegetables to the Avgolemono Soup.
  • Omit the chicken in the Avgolemono Soup.
  • Add 1-2 tbsp white wine and/or olive oil to the Base.
  • For a thicker soup, dissolve 1-2 tsp cornstarch in 
  • 2 tbsp cold water. Add it to the Avgolemono Base.

The Avgolemono Culinary Spice Kit includes the following spices:

Couscous aux Sept Légumes

‘Couscous with seven vegetables’ is a traditional dish in North African countries and much loved by its visitors. Saffron supports the rich flavor of plenty of fresh vegetables. Don’t worry about the chopping! Luckily, the vegetables are used in a larger size for this dish. Couscous is also cooked with lamb or sheep.

Tfaya like Caramel

A typical topping is Tfaya, caramelized onions, raisins, and cinnamon. With Tfaya, arrange for a longer cooking time.

Variations

  • If you use chicken breast, cut it in three even parts.
  • Optitional vegetables: tomatoes, zucchini, green beans.
  • Without meat, substitute water with vegetable broth.
  • Substitute couscous with cooked potatoes.
  • Add caramelized onions with raisins (Tfaya).

The Couscous Culinary Spice Kit includes the following spices:

  1. paprika, turmeric, ginger, black pepper, saffron
  2. cinnamon, cardamom
Indian Saag Paneer

This dish became popular in the United States as Palak (spinach) Paneer. Saag Paneer is more flexible as you can use and combine any green leaves you like.

Paneer is an Indian fresh cheese similar to unsalted cottage cheese. It melts not easily. We included in this recipe plenty of options for an even delicious dish if you can’t find paneer.

Variations

  • Substitute paneer with tofu, feta, garbanzo beans (drained can), or cottage cheese, and/or serve it over boiled potatoes.
  • If you don’t have a food processor, chopped the leaves finely. Or use baby leaves and use them whole for more texture.

The Saag Paneer Culinary Spice Kit includes the following spices:

  1. Cumin, coriander, garlic, turmeric, cardamom, cinnamon, cloves, ginger, white pepper
SpiceBreeze Review October 2018 – Final Thoughts

The October SpiceBreeze collection has a really nice mixture of recipes and spices. I’m particularly excited about the Paneer as I love testing out Indian recipes, they are among my favorite to make. We also received recipes and spice kits for a Greek dish, and two Moroccan Dishes. I spent some more time on their website again this month and really enjoyed looking up each spice kit I received and the variations they suggest for each recipe. I don’t know about you but I could spend hours looking through recipes.
