Thai Yellow Curry – RawSpiceBar

Life has been extremely hectic as of late. I am barely keeping up with box reviews, I get 50-100 emails a day, and I am also implementing a lot of changes with my subscription box Magnolia Post Co. As a result, cooking and cleaning are definitely being neglected. But…..have you ever noticed, it’s when you are stressed that you need a clean house and a home cooked meal the most? I’m trying to take a step back, and get my house back in order, but let me tell you, it hasn’t been easy. Therefore, I’ve been looking for quick meals that I can throw in the crockpot. This recipe appealed to me because the instructions were so darn easy. Throw all the ingredients in the pot and flip the switch…..I can handle that right? However, as much as I loved how easy it was, it definitely didn’t turn out as good as I was hoping. I had to play with the seasoning before it was done cooking because it was just so blah. You will see my notes below, but I used some fish sauce, curry powder  and brown sugar to adjust the taste……and I would definitely add some tofu next time. PS – I used spices from my April RawSpiceBar…..more recipes to come.

Recipe: Thai Yellow Curry

Ingredients:

  • 1 can chickpeas
  • 2 small orange peppers – chopped
  • 1 small onion – diced
  • 2 yellow potatoes – cubed
  • 3-4 carrots – sliced
  • 1 cup edamame
  • 1 cup veg broth
  • 1 can coconut milk
  • 1 tsp garam masala – RawSpiceBar
  • 1 tsp cummin
  • 1 tsp turmeric
  • 1 tsp coriander
  • 1/2 tsp salt
  • 1-2 tbs fish sauce
  • 2 tbs nutritional yeast
  • 1 tsp ginger
  • 2 cloves garlic
  • 1 tsp lemon grass – or 6 dried sticks
  • 2-3 tbs sugar

Instructions:

  • add all ingredients to slow cooker, cook on low for 8-10 hours or high for 4-6 hours
  • serve over rice

Notes:

  • I found the curry a little blah, you will have to adjust according to taste, add more fish sauce if it needs salt, or a little more sugar, I also added 3-4 tsp of curry powder
  • the chickpeas took over the dish so I would reduce the amount next time, and maybe add some tofu
  • the BF said it definitely needs chicken…….he’s not vegan
